ITALIAN COOKERY COURSES
An Italian cookery course may be intended as an entertaining and relaxing way to learn how to enjoy life – it’s true! But there’s much more than this: it is also a good way to enter the complex and fascinating culture of our ancestors, of their rituals and art.
Our programs of cookery and cooking techniques are intended to offer an inspiring way to adjust and correct lifestyles, with a healthy food choice that is the first step to an improvement of life quality.
Important: During the course we will choose ingredients and food directly from local producers taking part to the local network of Terra Madre – Slowfood.


AUNT CATERINA, THE CHEF
Aunt Caterina is the chef, the custodian of the art of Roman cuisine that we wish to reveal to you. Aunt Caterina comes from an ancient family of women, like those who traditionally ran the old central Italy inns. With the typical sympathy and good mood of an Italian woman, Caterina will teach you how to make homemade pasta, meat stews, vegetables and many secrets of the cuisine of the ancient people of Latium.

FISH COOKING COURSE
We all know that eating fish is not only pleasant but also very healthy. But fish recipes are not only those with sea fish. Our place is near the lake, between two small towns that, since the Neolithic age, have been practicing fishing and have elaborated a very rich tradition of lake fish preparations. In this course we will show how to cook basic sea fish recipes and apprehend the differences with lake fish. The course is from Friday to Sunday afternoon.

Details of the course:
Friday - arrival at 5 p.m. at the Amaca and incoming. At 6 p.m. lesson: ingredient choice according to the season, menu preparation, cooking techniques and first menu: vegetable soups and fish, two recipes and many considerations on the differences between sea fish recipes and lake fish ones, seasonal vegetables, cake. 8 p.m. dinner with wine tasting (4 wines).
Saturday - 8.30 a.m. breakfast; 9.00 a.m. visit to the middle age towns and villages near the lake (Bracciano castle, Anguillara alleyways) by the Sabazia boat where we will also have an aperitif, late in the morning. Lunch with salads and other fish recipes at the restaurant of “good taste” in Trevignano town. Walk on the lakeshore. 4.00 p.m. return to the Amaca and relax. 5.00 p.m. lesson: ingredient choice and menu preparation: home made pasta with whole meal cereals with lake fish sauces and wild herbs, fish roasted and dressed with herbs and vegetable sauces, sweets made with local hazelnuts. Side wines.
Sunday - 8.30 a.m. breakfast; 9.00 a.m. visit to the middle age towns of the Etruria region, Sutri, Capranica in search of ancient Etruscan necropolis and suggestive memories of the life of ancient populations. Lunch with typical products from a local cheese producer and walk in the woods surrounding the Bracciano lake. 4.00 p.m. return to the Amaca and check out.

NOTES
• The courses take place in the hall of the Amaca house, a warm and pleasant place where a family kitchen is available with all its materials, first choice tools and devices so as to allow the visitors to easily work and perform all their tasks during the cookery course. For this reason, each group includes 2 to 6 participants.
• Menus are still to be defined with our professional chefs who will give the lessons. Menus can be modified upon request, if participants would like to learn some special recipe, since our philosophy is the one of “slow food”, of seasonality and zero distance and we are open to proposals from our guests.
• During the course a DVD will be produced which can be a useful tool not only to recall the wonderful experience you’ll have at the Amaca but above all as a video course and a useful device to store the information you'll need once you are back home, and you’ll be cooking and experimenting with your friends the poetic practice of our recipes.
