An Italian cookery course may be intended as an entertaining and relaxing way to learn how to enjoy life – it’s true! But there’s much more than this: it is also a good way to enter the complex and fascinating culture of our ancestors, of their rituals and art.
Our programs of cookery and cooking techniques are intended to offer an inspiring way to adjust and correct lifestyles, with a healthy food choice that is the first step to an improvement of life quality.
Important: During the course we will choose ingredients and food directly from local producers taking part to the local network of Terra Madre – Slowfood.

Aunt Caterina is the chef, the custodian of the art of Roman cuisine that we wish to reveal to you. Aunt Caterina comes from an ancient family of women, like those who traditionally ran the old central Italy inns. With the typical sympathy and good mood of an Italian woman, Caterina will teach you how to make homemade pasta, meat stews, vegetables and many secrets of the cuisine of the ancient people of Latium.

A people celebrated by artists all over the world as the most vital and entertaining could only create a cooking tradition accordingly. Roman cuisine celebrates the great Italian tradition with a sense of taste that is archaic, intriguing and refined at the same time.

Details of the course:
Saturday - arrival, check in, accommodation, biological, light welcome dinner.
Sunday - Free. Possibility of a trip to Rome (a visit to the National Roman Museum is highly recommended).
Monday - 8.30 a.m. breakfast; 9.00 a.m. visit to the middle age towns on the lake (Bracciano castle, Anguillara alleyways and little streets) by boat. Lunch with typical products from the wine bar of Trevignano, walk on the lakeshore. 4.00 p.m. return to the Amaca and relax time. 5.00 p.m. lesson, ingredient choice and menu preparation: home made egg noodles, stewed veal stuffed with chestnut, seasonal vegetables, home made tart. 8.00 p.m. dinner and wine taste (4 wines).
Tuesday - 8.30 a.m. breakfast; 9.00 visit to the wild area of Tolfa and the baths at the Stigliano spas and the dead town of Canale. At noon, visit to a local farm in the area of Tolfa and lunch with typical products; a walk in the open range where wild horses live. 4.00 p.m. return to the Amaca and relax time. 5.00 p.m. lesson: ingredient choice and menu preparation: whole meal and cereals home made pasta with stewed meat and oxtail stew, cake made with locally produced hazelnuts. Side wines.
Wednesday - 8.30 a.m. breakfast; 9.00 visit to the Museo of the Civiltà Romana in Rome (in particular the sections on customs and food habits of the ancient populations). Lunch in a restaurant proposing original recipes drawn from ancient Romans books. Walk in the  Fori Imperiali central archeological area. 4.00 p.m. return to the Amaca and relax time. 5.00 p.m. lesson: ingredient choice and menu preparation: special pasta of the Castelli romani area with meat rolls and sauce preparation, pan fried vegetables and seasonal herbs, biscuits.  Side wines.
Thursday - 8.30 breakfast; 9.00 visit to the middle age towns of the Etruria region, Sutri, Capranica or Vico lake, Ronciglione and Caprarola. Lunch with typical products from a local cheese producer and walk in the woods surrounding the Bracciano lake. 4.00 p.m. return to the Amaca and relax time. 5.00 p.m. lesson: ingredient choice and menu preparation: original cereals soups (barley, spelt, etc.) with lamb or entrails, artichokes, cake. Side wines.
Friday - 8.30 a.m. breakfast, 9.00 visit to the middle age villages in the park surrounding the Treja river, to Calcata, Mazzano, a walk in the woods and in the canyons in search of deserted castle ruins.  Lunch with local products in a wine bar in Calcata. 4 p.m. return to the Amaca and relax. 5.00 p.m. lesson: ingredient choice based on seasonal products. Menu preparation; pasta with chickpeas or beans and entrails or other special meat recipes, sweets. Side wines.
Saturday - breakfast and checkout.

• The courses take place in the hall of the Amaca house, a warm and pleasant place where a family kitchen is available with all its materials, first choice tools and devices so as to allow the visitors to easily work and perform all their tasks during the cookery course. For this reason, each group includes 2 to 6 participants.
• Menus are still to be defined with our professional chefs who will give the lessons. Menus can be modified upon request, if participants would like to learn some special recipe, since our philosophy is the one of “slow food”, of seasonality and zero distance and we are open to proposals from our guests.
• During the course a DVD will be produced which can be a useful tool not only to recall the wonderful experience you’ll have at the Amaca but above all as a video course and a useful device to store the information you'll need once you are back home, and you’ll be cooking and experimenting with your friends the poetic practice of our recipes.
